My favourite is carrot, leek & potato or carrot & corriander.
Carrot, Leek & Potato Soup
12 oz Leek sliced thinly
9 oz Carrot grated or preferably Julian strips.
couple of potatoes cut into cubes
2 garlic gloves crushed
1 heaped teaspoon of ground cumin
1.5 litres of veg stock (veg stock in little tin is best)
some olive oil
heat oil in large pan add garlic and leek soften gently for 5 mins
add stock, cumin and season with s&p bring to boil add potatoes.
simmer for 10mins then add carrots bring back to boil simmer for 5 mins.
If you like pureed soup then when half has been eaten puree soup in blender pour into pan with 6 tbsp of cream heat through.

Sounds nice Grace but what ever happened to soup made from a big ham bone !
Lovely chunks of slightly salted ham in soup that you can stand the spoon up in !
Has the world all gone veggie?
