25g (1 oz) butter
1 medium onion, chopped
1 small green or red pepper, cored, deseeded and chopped
25g(1 oz) plain flour
450 ml (3/4 pint) chicken or vegetable stock
450 ml (3/4 pint) skimmed milk
2 medium potatoes, diced
125g (4 oz) mushrooms, sliced
200g (7 oz) can sweetcorn, drained
salt and pepper
1 tablespoon chopped chives to garnish



melt the butter in a medium saucepan over a moderate heat.
cook the onion and pepper for about 4-5 minuets until soft but not brown.
Stir in the flour and cook for 1 minuet.
Add the stock gradually, stirring continuously.
still stirring add the milk and bring to the boil.
Add the potatoes to the pan with the mushrooms and the sweetcorn.
season to taste.
Reduce the heat and simmer gently for 20-25 minutes until the potatoes are tender, stirring occasionally.
sprinkle with chives before serving

serves 4
preparation time 10 minutes
cooking time 30-35 minutes

made it tonight, was yum, but i put too much pepper in. the rest is going in the fridge and will be with my lunch for work on Sunday.
